Honey Sweetened Kefir Popsicles

Popsicles have always been a Summertime treat, as long as I can remember. Whether it’s Mr. Freeze, Cyclones or Fruit Bars, our favorite store brands aren’t always the healthiest.

I was wondering what to do with the Kefir from our August Box, aside from making and drinking it as is. At first, I was thinking of making a type of Chai drink, but then remembered that I had spent weeks running around from store to store trying to find a proper popsicle mold and popsicle sticks. Let me tell you, it was quite an adventure. Who knew that finding something so simple would turn out to be impossible. Come on, you can’t go very far with those dollar store plastic containers that break every time you try to use them. So, I had no choice but to order from Amazon.  And seeing how Summer is almost already over (please no!!!!), I figured I better make popsicles at least once!

Because it’s actually my first time making popsicles at home, I decided to stick to basics and go easy so this recipe only has 3 ingredients! Instead of loading it with cane sugar, I opted for honey and frozen berries for the sweetness.

Start by making your Kefir (you will need to do this at least 24hours before as that’s normally the amount of time it takes before it’s ready to consume).  Add the 3 simple ingredients into your blender, pour into your mold, let freeze for about 8 hours and voilà!

These are a great dessert or afternoon refresher when you need to cool down.

I don’t like when things are too sweet so feel free to taste yours and adjust the amount of honey accordingly.

Oh and go ahead and get creative, you can do so many great things with this recipe. xo

Ingredients:

  • 1 cup frozen mixed berries
  • 1/4 cup wild flower honey
  • 3 cups kefir

Directions:

  1. Prepare Kefir as indicated on package or use store-bought kefir.
  2. Blend all ingredients together.
  3. Pour into popsicle mold.
  4. Let freeze for minimum 8 hours.
